A lot of other games have been covered, so I'll throw these in:
1) Star Fox - 64 may be the best Star Fox, but it's worth trying the original that started the franchise.
2)
Brain Lord - If you like Soul Blazer and Illusion of Gaia, you may like Brain Lord as well as Brain Lord is another Enix game.
3) Killer Instinct - Nothing like busting a 32-hit Ultra knocking a guy off a skyscraper who crashes right into a car on the streets below. Ouch. I really need to see if I can push combo that higher sometime.
KI never appealed to me. its mechanics are somehow decent, but the massive generic cast of characters it has is so boring id just play anything else if posible.
Killer Instinct is a pretty decent fighter, but the SNES version is completely insignificant in comparison to the arcade version. And of course, the characters aren't really that great.
BUT ONE OF THE CHARACTERS IS A VELOCIRAPTOR
Terranigma is fantastic and part of the same series as Illusion of Gaia and Soul Blazer.
Demons Crest/Gargoyles Quest is probably one of the best looking, sounding and playing games on the console.
If you like shootemups like Contra, Rendering Ranger: R2 is incredibly rare to even find a rom but well worth it, as it might be the best looking game on the console.
Phantom 2040 is actually really good despite being licensed from a cartoon and has an awesome grappling hook mechanic.
If you're looking to test your brainmind out, Umihare Kawase is a really really good puzzle/platformer game with interesting graphics.
A few of my favorite games on the system:
The Firemen is an overhead puzzle/action game where you play as a duo of firemen inside of a burning building as they climb to the top.
Sutte Hakun is in Japanese but it's also one of the most addicting and mind numbingly frustrating puzzlers on the system.
Sanrio World Smash Ball is an interesting soccer/disc soccer game that I haven't met a single person who didn't like.
Power Lode Runner is another puzzle platformer, with decent graphics and lots of replayability.
Mickey and Donald: Magical Adventure (actually, just get any of the magical adventure games. It's mickey and capcom, mickey by capcom.)
Majyuuou (AKA King of Demons) This game is a wonderful Castlevania clone, but a bit darker with lots of blood and violence. One of my favorite platformers.
Kishin Douji Zenki: Battle Raiden is another one of my favorite games on the system, a 1-plane beatemup with platforming elements.
If you like Super Puzzle fighter, "DOSSUN! GANSEKI BATTLE" came before it ans in my eyes is a lot better.
Fire Striker is a combination of Final Fantasy and Arkanoid, and is a lot better then it sounds.
SkyBlazer is another 1-plane platformer/beatemup and it also has probably the best soundtrack on the SFC besides Demons Crest and Actraiser 2
Speaking of Actraiser, get both of them.
