The main NPC's and player sprites are Dwarf, Elf, Half-Elf, Human, Half-Orc, Half-Ogre, Gnome and Halfing. Any of the above would be a regular NPC or player sprites (Halflings and Gnomes have the same sprites, so do Half-Orcs and Humans). In the game data files All of the above are in a folder named 'critter' and the other NPCs are in a folder named 'monsters'. The monsters are pretty much everything else except the Dwarf, Elf, Half-Elf, etc.. The game also has unique NPCs which would be impossible to tell apart unless you've played the game or were ripping the game (I happen to be doing both ). When I post a Unique NPC I will specifically say that it is unique.
For example:
Are both player/NPC sprites (for the same NPC, I still need to rip the sprites of him attacking with a shield)
Is a monster NPCs
I have not ripped any unique monsters yet, I plan on doing so soon.
To make sure there is no confusion:
Are all items you can pick up and use/wear. There are some other items used only for quests and others for building all sorts of devices (for example a character can learn a skill to combine two plants together and make a healing powder or combine a capacitor and a staff to make a shock staff, I will rip schematics for those later).
And these are some system sprites. To be more specific, when you have a follower you can open up their stats and see their portrait. NPC portraits are on the right and are smaller. The bigger ones on the left are Player portraits. Once you pick a race you can pick a head to go with it and that will be your portrait for the rest of the game.
By the way. All the sprites in this post I have reuploaded to imageshack to eliminate any problems with stashbox. I hope I answered all questions you had or may have had.

Not the sticks and stones (of which would break my bones) but the Baleful Hound (who can say whatever he likes, but won't hurt me)

You would presume correctly, although some of those sticks and stones do have shifty eyes . The Baleful Hound is actually one of the harder enemies, not quite sure where it gets the name since it doesn't seem to be very baleful about being a horrible monster.

All of these sprites are things the player can wear. Some of the sprites were oddly named but for the most part I think I am accurate. Also, some armors (especially the bigger armor) used the equipped sprite as the inventory sprite. A lot of the armor reuses ground sprites from other armor types and the game files don't make it clear which goes to which. This is all the armor in the game files so any inconsistencies is up for interpretation.
Heres my attempt at ripping a facade (what the game calls special tilesets for unique structures). This is the tamest facade by far since all the others are enormous and are split up into a bunch of different files that each contain more files.
