Do you mean the files themselves, or the models from the files inside the ISO?
Extracting the files out of the ISO requires a FTP data transfer from the Xbox to the PC using a crossover cable and a modded Xbox.
It's very hard to do, so it'd be best if you just look at this tutorial:

Actually if you already have the ISO on your computer there's a few ISO explorer tools you can use to extract them. Out of convenience I use this: http://www.game-tuts.com/community/index...geid=modio program simply because its easy to use and has a lot of generally helpful tools for 360 modding. There's other programs as well, but Modio there is just a good all in one.
