I've got the first Board converted (Toad Road), and all its accompanying props. Only issue is taking a picture of it. Would a stock image of the entire board be able to be used?

Personally I would just find a portion of the board you like and have that showing in the preview, unless you can find some way to shrink the whole board small enough to fit inside the whole preview, in which case if you decided to do that it would be fine too.

Sorry, should have been more specific; that wasn't exactly the problem. =P
The board model alone looks ... pretty bare. I don't see a way of getting the multiple board props/decorations into the image with it.

Oh I see. I misinterpreted, my bad.
TGE's idea probably sounds like your best bet though -- I wouldn't recommend using images from the internet for your models, for the simple reason it'll give the impression that the model looks exactly like that with the props and all on it, in which case it doesn't, so.

I use QuickBMS with a LZSS decompression file.

Edited the first post to say that due to a copyright claim, MediaFire closed my account causing all download links in this thread to be dead. However, *all* of the MP9 models are uploaded to the Models Resource and available for download here.
With that said, I now am seeing that I still had ripping to do for this game! If I can get my Wii tools transferred to my laptop then I shall resume soon!
