Depends on console and game. Either take screenshots in emulators or dig into the game files.

Tho you could use unity asset studio v0.5 : https://github.com/RaduMC/AssetStudio/releases
If your trying to rip steam, pc/ android games ,and, visual novels these two programs are the best for sprite ripping.
