In this very post, I will go over how you can rip assets from your favorite SCUMM games!
For doing this very task you have two options:
SCUMM Revisited & ScummEX
For functionality the best option is... SCUMM Revisited!
For least bugs... ScummEX!
SCUMM Revisited has 3 versions, the version I recommend is v2. Then you have v3 and v5 which are unfinished but may contain useful new features!
I would recommend using SCUMM Revisited, since it has some amazing features. Even if it has crashed a bit more...
