Well, if they changed up the rentals to have some honest, competitive movesets, or you could roll a 'mon and moveset, Netbattle/SHODDY style, then that would be badass.
Game would still have all the horrible imbalances of the first Gen, though. It'd probably feel like a massive step backwards.

Tetrisphere was my favorite 64 game.
It would be nice if they began including Sega CD and Sega Saturn games on VC, though it will probably never happen.

Mario Party 2
Snowboard Kids
Super Smash Bros.
Pokémon Stadium wouldn't work out though, and Diddy Kong Racing is shit, so skip those 2.
Seconded. Also, I'd like to see Amiga on vcon. All the early scumm games were on Amiga.

I really think Nintendo should release Unirally / Uniracers. That game was the shit. Also, the controls were fucking harder than my cock could ever be, but still, this game owned fucking hard.

Actually that's a crock that certain sites use to try to avoid being shut down. It's illegal to own ROMs for any reason. Even if you have the original game in a box somewhere. But don't worry about the companies coming after you. Unless you're distributing them.
Getting back on topic, here are some games I'd like to see:
1) Final Fantasy IV, V, and VI
* Of course, Square just remade the hell out of these games. So I doubt we'll see VC ports of these games.
2) Mega Man X2-X6
* Mega Man X Collection had terrible audio problems. Some games you had to crank up the volume to even hear anything. =/
3) Mega Man 1-8
* Unless you have the X-Box version of Mega Man Anniversary Collection. Gamecube and PS 2 owners got screwed with MMAC.

This reputable source, along with many others, would say otherwise. Unless you've got a law degree and actually read the laws pertaining to this stuff, it's hard to say either way.
