I'm guessing he's just using an emulator and setting the graphics plugin to dump the textures. That's how I've always done N64 textures anyway. I can give a more in depth explanation if you'd like.

Yep. I found where the sprites were located in the ROM, and I have them all extracted, in all 8 colours. All I have to do is arrange them, and they're done.
For example, here are all of the
heads and
other limbs for the green Yoshi.
