As for PSP/PS2 ripping, it depends on the game really. I believe I had a quick check of them, but didn't get much luck from it regarding any images. You can treat PS2 and PSP games like standard ISO files and open them with any ISO editing program or mounter.
Take a look, if you get stuck, I'll try to help out

If anyone wants to finish up stage icons, I worked through a bit of the process. Going through a race at 3% speed to get the rest of the icons gets to be a it lengthy.
