After seeing Doc Louis' Puch-Out I think we NEED him as an AT.
Normally Doc will appear and give you advice on an opponent, think Snake's codecs.
"Okay son, you gotta watch for this tubby king. Dedede's hammer can pack quite a wallop baby!"
After his ramble he'll stay on the stage for a short time to watch, but DON"T HIT HIM!
Hit him and chocolate bars will fly out (which you can eat and restore health). So pissed from losing his chocolate bars he'll tear off his shirt revealing his leopard suit!
Around 2:00 Now get ready for a beat down!
Also I don't think Poochy should be a rare AT. I mean yeah I can understand Mew being a super rare gift giver, its freaking MEW! But Poochy seems like he doesn't deserves the super rare awesome status. We should give rare status to really awesome characters. Nothing against Poochy but you know what I mean.
EDIT: Why not Tyvon. Maybe Excite Biker but I'd hate to see Lakitu as 8-Bit again when Hammer Bro was 3D... That wasn't fair.

Lakitu was 3D in Adventure Mode in Melee though. We could sprite Lakitu ourselves. I don't think it'd be "the same" if we didn't use the original Excite Bike sprites. It'd be kinda like making Game-and-Watch 3D.

I have two suggestions from Super Mario Galaxy.
Hungry Luma: He appears and suddenly, you have twenty (Or more) Star Bits. Hungry Luma talks with your character and says: "If you feed me a bunch of Star Bits, I'll burst with snacky happiness and then transform. I'm sooooooo hungry!" From then on, you have the control of Mario Galaxy's Star Cursor and you can do two things:
1. You can throw star bits to your enemies for do damage.
2. You can feed his and he... will transform into galaxy. Awesome! (But useless) If you do this, Hungry Luma will say "I'm stuffed. Here we go. Transform!!"
About the other one (Rosalina), I'll post the idea later.

I don't remember Lakitu in Melee's adventure mode... But there is a flaw in your logic, Devil. Devil was originally an 8-Bit NES character just like Excite Biker, however he was given a 3D model in Brawl. I found that strange.

I think that it isn't the same. There aren't 3D models of Game & Watch, but there are some 3D model (In Melee's trophy and in Nintendo DSi Sound) of Excite Biker. ^^"
Personally, I like the idea of the revamped Excitebike sprites.
i don't. excitebike only appeared on the nes. he's most well recognized that way. with lakitu it seems like they made him 8-bit for laziness. he's not any more recognized on the nes than he is anywhere else

While I agree that the Excite Bikers should stay 8-Bit, they released an Excite Bike on WiiWare so, I can see why they could be remade...
