It's the first mob to use billboarding probably because that feature doesn't seem to exist in vanilla MC. And people generally like models more.
Yeah, I actually create things like billboards and spherical shapes and shit just as a big fuck you towards those who only want blocky models.
By the way, with Turbo Model Thingy, it is in theory possible to create voxel mobs. EDIT: Also, billboarding DOES exist in vanilla MC, as the items you drop. So yeah.

If I remember correctly, they aren't quite billboards, since they only face you horizontally. They don't completely face you when you're above or below them.

For people who've been not sure about buying Minecraft: There's now an actual demo available.

Recreated the cow skin for non-demo version.
Right Click -> Save As -> place in minecraft mob folder (C:\Users\*yournamehere*\AppData\Roaming\.minecraft\bin, open minecraft file with 7zip or a program alike)
