How about Wario's Woods? It's got Wario's name in it, it was the only game Toad starred in, and it's fun.
But more seriously, a stage based off one of the areas in Balloon Fight would be cool. Floating platforms, man-eating flish, and pink flipper things galore! Plus lightning balls from the clouds.
