I'd like the return of those spherical enemies with the spiked balls (or flames or ice crystals) rotating around them. I can't remember what they were called, but the challenge they added was nice. Unfortuantely, the fire version in SA1 was a little cheap.
To me, Tails and Amy were completely different from Sonic.
If you completed Sonic's story with all the upgrades first, Tails would have a harder time racing him. However, if you played through Tails' story the moment he was unlocked, it would be much easier. I also enjoyed the vast alternate routes he opened up.
Amy's levels were a heck of a lot different than Sonic's in every way (they weren't really any harder either). They were mostly platforming and puzzle-solving.
GrooveMan makes a valid point. The afns are unhappy by something so they complain. Sega eventually listens, and the fans complain about something else. Be satisfied, dang it!
