I have no idea how to rip from DS, but I think tahaxan might do it, but I don't know how to use it.
For PC games usually you can find edition tools a the own publisher's site or at the gaming community, and they usually helps you to extract the graphics for edition, so it's easier. There's a very useful wiki here
Wii and GC, I've been told the emulator Dolphin have built-in tools. Never tried, my driver can't read wii's original discs
PS1 you can try first with PSicture and if it don't work you can use PSX-VRAM
Now for PSP I use two programs. mesh2rdm and GitMO, both can be found here
