Dwarves do tend to be depressingly similar across all of their occurences. Dwarves that behave differently would be the exception - and probably tucked away in obscure Trad RPG settings and fantasy novels so the unwashed masses don't get to see 'em.
TBH I'm not a massive fan of fantasy races; partially because of the icky genetics about it (ARGH HALF BREEDING), and partially there's nothing there that can't be achieved with just different tribes/races/cultures of Human. They're all essentially Humans anyway; why veil it?
