I just think it'd be neat to have the unused stuff, however useless it might be to actually use, to show what kind of stuff was there, but isn't viewable through normal gameplay. Test rooms and such are always interesting to see in my opinion.
As for Forsaken Fortress, I'd say you should rip all the variants of it, but if say the model is the same for a few variants of it then just submit that one model with folders containing the different texture variants. Also, if other things like say the ocean outline or the window lights are exactly the same then just submit those as one thing. I wouldn't even say the low poly version of the model would be all that necessary to rip unless it is different looking design wise.
Also, if you can't get the Fairy Fountain with BMDView2 or MaxBMD than you may just want to leave it for later. Since those are the only things that read BMD models, the only way to get that model at that point would be a rip through Dolphin, which for obvious reasons is far more troublesome to mess with and not worth doing if you can avoid it.
