Also, I don't know what I should do for the jumping sprites in the Playable Characters sheets. They can jump at different heights so should I just leave it as it is or...

The Daphne sheet looks good to me! You don't have to put the line under the jump sprites like with Shaggy if you don't want, you've already posted it. And as long as the different heights use the same sprites it doesn't matter.
