Whether people care about this or not is entirely down to how much they like Ocarina of Time. That is all.

You answered your own question. Using better textures and shaders does not automatically make old code new again. As far as I understand, the actual engine is unchanged. It was mentioned earlier in the thread that people have manged to recreate glitches from the original versions in this. Though I admit I don't know how much code-manipulation they'd have to do for Super Guide and Accelerometer additions.
Still, it's hard to say that it's a port when things like the inventory have been revamped specifically for the 3DS control scheme, or the super guide, or throwing in a boss rush mode and the master quest (which also had some changes to make things much, much harder).
Similar things were done with SM64DS and Diddy Kong Racing DS, there weren't that many changes to those games in specific but nether the less they had some purpose. It could be very well a lazy remake. But a straight forward port, again, is something like virtual console.
