A lot of the adult+baby poses don't actually come seperately, oddly enough. I'm pretty sure that in the case of Luigi and the cookie, there is probably a cookie-less version in the ROM. I'm also not sure exactly what you mean by "hurt" and "flipping" poses; could you post a screenshot of an example?

EDIT: Nope. Apparently the cookie's part of the sprite too. I'll see what I can do by the weekend; I don't have too much work the next week.
