They just got to a point where Mario looked as good and accurate as he needs to be.
If you'd turn them into high-poly models like that of the current Mario, they'd still be recognisable as that Mario from that game. This new M&L is a great example of that, capturing the look and feel the sprites had. A different example is Super Mario All-Stars: 4-5 different games on one cartridge, yet none of the games borrow or recycle sprites from one and other, with the exception of Lost Levels of course.
