So... Apparently by tipping NPCs in these games, you can increase your chances of running into shiny pokémon. This might explain the shiny sentret I found a mere three hours into X...
With regards to the games' difficulty, I can report that things have just been getting progressively easier for me as I've been playing. I started with Fennekin and picked up a Honedge as soon as I could, and so far they've been able to beat everything I ran into without any real trouble.
I also picked up speed boost Torchic, now speed boost Blaziken, who thanks to his mega evolution is now the most powerful pokémon ever. I've been leveling him with the exp. share and have used him in battle all of three times, though this wasn't out of necessity. Before the... fourth gym, I think you're also given Lucario for free who kicks ass even without his best moves (extreme speed, close combat) and his mega evolution, which you're given instant access to anyway.
However, despite the lack of challenge, I'm still having fun.
