Cat Peach and Tanooki Mario actually do have varying stats, though :V Both are ever-so-slightly lighter than their default counterparts, so they accelerate just a weeeee bit faster than their regular counterparts. As a tradeoff, their a weeeee bit slower but handle better in midair.
Pink Gold Peach and Metal Mario are heavy variants of the defaults.
Fun fact: The AC Villagers have the same stats: the female and male villagers, respectively. Very, very slightly lighter than Mario and Peach...so yeah, what you just mentioned is actually already feasible within the game...
tl;dr:
Tanooki Mario - light mario
Mario - boring mario
Metal Mario - heavy mario
Also, if you guys care:
- Dry Bowser is the same weight as actual Bowser (Heaviest)
- Link is the same weight as Rosalina and DK (most people call them "Cruiser" class)
- Isabelle is the same weight as Toad, or Shyguy (Lightweight - NOT Featherweight)
