It's the same reason Splatoon has no voicechat: It's a decision made mostly by producers to limit toxicity when younger players are playing online with strangers (which is also why your actions are limited to a thumbs-up and pom-poms: there's probably a "crawl dungeons with strangers" feature)
Of course, we have the brains to not talk smack and make judgements about other players in a Zelda game, but you never know given how bum-ass stupid the Internet is ("Oh man we're playing with a girl? Wait, Zelda has no online? And Splatoon's no voice chat is still stupid. It's called parental guidance. Make it so voice chat is off by default. Sorted.
