Well, the lack of each company's mascot may be due to the fact that they wanted some consistency with the characters's design. I mean, they all have a proportionally accurate human figure and have anime like faces (except the Servots that follow Tron around) and/or belong to somewhat serious series. Someone without these characteristics, like Mario, would not really fit into the game.
That is not to say that Nintendo doesn't have other characters that can fill that quota, of course. There's already the guys from Fire Emblem and Xenoblade, but one can also add characters like Pit, Palutena, Samus, Captain Falcon, Link (with Navi to talk for him), Sheik, Fox*, Falco*, Little Mac, Isaac, Takamaru and such.
*A bit of a strecth, seeing as they are not that proportionally correct, but could work.
I know, its kind of a dumb and arbitrary rule in a game whose main selling point is to make characters from various companies fight in absurdly extreme battle sequences, but that's besides the point.
