The Professor ends up being the "champion" in this game. He's basically groomed you into becoming the champion of their new league, and is the final battle.
Something I really liked about this game, somewhat forgiving how the main story dropped the ball for me afternoon getting my hopes up, was the elite four and final battles. Two of them are people who you fought before and were easy, but bring out the big guns when it's finally time to be serious, one is a character you meet but don't get to fight, and the last is a total stranger. I kind of liked that dynamic.
Furthermore, after you are the champ, the final battle isn't solely against Kukui anymore, but any number of challengers ranging from main characters from the game to new characters you haven't seen before. The different battles are limited, but the fact it changes at all is pretty cool.
