You know, now that you mention the Super FX chip – how many games were there anyway that utilised it for polygonal 3D stuff? There can't be too many... I think Star Fox model format has been figured out already.
But yeah, I'd say SuperFX games are among the hardest because there's —no— standardised catch-all or even catch-some method of ripping the models. Every individual game must have a specialised tool written for it. The same goes for PSX, sure, but at least there's TMD and you get a filesystem to begin with.
