Ripping 2D Layout City/World Maps

Hello guys, could anyone explain how ripping 2D maps is done? Gotta do it for many games, Pokemon, Digimon, Suikoden etc.

This is an example of what I'm looking for. I don't want to go screen by screen and take shots, I'd like to know if I can extract a map somehow while I'm in a certain town, village, dungeon, open world. Thanks
