You’ll notice it’s not just the add new sheet button that’s changing. The layout switches to the mobile theme at that point and it was chosen so a device like an iPad can still see the full layout in landscape but smaller devices switch to a more mobile-friendly view. You can always force the mobile layout off completely from the edit profile page on any of the sites if you’d prefer it not to switch over automatically.
