PC and mobile games are generally the easiest. Although, not every PC and mobile game is easy to rip from. Sometimes, their assets might be encrypted which makes them tougher to rip from.
A few consoles I know of that are hard to rip from are the Sega Saturn, and the Philips CD-i. (Especially the CD-i.)
The Wii might seem hard to rip from at first, but once you learn the tricks and have the right tools, it's actually not that tough.
