I've scoured the internet for help on extracting this game's contents for quite a while, and I've barely found anything of value. The best thing I can find are some scripts dating to 2016 (here's a shared MEGA folder which contains the mentioned scripts) and people asking for help on various ripping-related forums. Though I'm sure there's someone in this community who can do something more up-to-date.
What I personally want help with are specifically models (preferably skinned), textures, and animations. The model format is .kimesh, and the texture format is .kitex. Though I have no idea where animations could be.
Is there anyone here interested enough in giving a hand? I have the Steam version of Killer Instinct, so I can rip and test with files if need be.
