Hi! You can actually just rip the sprites with their palettes intact without the need for external palette files using LagoLunatic's DSVEdit. This link leads directly to the GitHub page for it.
When you extract and mount a DS Castlevania game through it, you can open the sprite editor by pressing "P" on your keyboard and locating the sprite set you want to export to image. It'll open a window like seen here:
Once you have the sprites you want here, just hit the button that says "Export to darkFunction." We're not using the darkFunction program, but it does export a pretty nice spritesheet of every sprite for every palette the selected thing has! Pretty convenient.
