How is it possible to rip them? I have seen full rips posted on this site of characters in Mario Kart Super Circuit, Cartoon Network Speedway, and Crash Nitro Kart. Does anybody know how to do this? What would you recommend?

There are two methods
1- The most accurate way is to use tile molester to open the rom and get the sprites directly from it. But many (like myself) really can't use this tool, it requires some practice and patience
2- The second way is to get a program called AnimGet, which takes screenshots each 10 millisecond when running and use it together with the GBA emulator, Visual Boy Advance. On Visual Boy Advance, you can turn off the layers you don't want/need, so all you have to do is a simple copy-paste work
Any more questions?
And maybe I should move this thread to sprite discussion, here is for the requests ;p

Well, if this fits better on the sprites thread, then go ahead and move it. In GBA racing games, you always see the backside of your character, and I am also trying to get the front side. TileMolester sounds good, but I don't think it would be easy to obtain. Will Visual Boy Advance do the job well?

Oh, both would do the job if you know how to do it. You can get tile molester
here or the alternative version
here
Visual Boy Advance do the job as long you play the game. All you have to do is to open both Visual Boy Advance and AnimGet, get the later start recording and play the game, just remember to turn off the unnecessary layers (Ctrl+1, Ctrl+2, and so goes on. Press the keys again to turn them on or off). After you're done, go to AnimGet, stop it and save the images (it's going to save the files in a sub-folder where the program is), so you'll have to check each image and if you feel you missed something, just play the game again and again until you get all of them
