The Grim Reaper is a regular enemy, but you can also drink a potion to transform into his shape. Although, I would put him in the enemy section, since his appearance is not the natural shape of the playable characters and temporarily limited anyway.
Exit & NPCs belong to misc.
How many NPC sheets will there be? Do they deserve their own section?

No idea, this depends on the ripper. People can make 3-4 sheets of it or a big one.

Very nice. Were you planning on doing the bosses for the game? I have save states for them ready to go, so if you don't I'll get to them eventually.

Played through and must say, this is one of the fairest SNES platformers of all time. If you die, you start in the last area where other games let you replay the whole level. Even using one of your umlimited continues brings you back to the last area, not the level start (you lose all your collected spells, but you get them back in no time).
Nice move by the developers: Before you get to the last level, you fall down a hole and can collect spells and health while you're falling.
But hey, this doesn't mean it's a cakewalk. Especially the first area of the last level will give you hell (max. health/spells are minimum requirements because you have to stun the enemies/avoid falling onto these spikes).

The last boss of that game is so freaky looking. I remember getting save states for the game to try and get all the bosses, but I never got around to actually ripping them.

US saves? If you want, you can also have my Japanese quicksaves since stage 1 Tanooki and final boss Colin Farell have some differences.
I'll claim at least the cutscenes, they're really easy to get.
