Shadow the Hedgehog and SA2B model ripping

Hi guys. I'm a newbie to model ripping, but could anyone please tell me how I can rip models such as bosses and enemies from Sonic Adventure 2 (battle if necessary) and Shadow the hedgehog? Levels and boss arenas would be nice as well. I need to know:

-Tools
-Process
-Configuration of programs if necessary
-Method of getting textures (Dolphin setting, right? Sifitng through that just sucks...)
-How to view the game's contents such as model files from their rom for a Dolphin emulator

For sonic Adventure 2, you will need the SA tools (can be found on sonic retro) and an hex editor.
