Halfbrick Studios uses a custom engine called "Mortar" for most of their games, such as Jetpack Joyride, Dan the Man and of course, Fruit Ninja.
Fruit Ninja was initially built on the aforementioned engine until 2020 when the game was entirely remade in Unity, alongside Monster Dash.
The 3D models are .mmd files. The .mad files are likely metadata. I have a ZIP file containing the watermelon model from an older version of Fruit Ninja, as well as the fruit texture file.
