excuse me are you asking for realism in a game in which a child with a magical clay pipe is locked away in a secret chamber so when fully grown he can beat up a man with two mums who turns into a giant pigdemon
I just genuinely don't think my immersion in the game is going to be particularly broken when a made-up animal doesn't bleed when I wack it with a pigsticker. There's little or no blood in Soul Calibur which is also a realistic-looking game, and nobody's bitched about that

you know how when you attack ganon in oot (not ganondorf, ganon) drops of blood fly out and are on screen for like a millisecond

There are teen games that have minor instances of blood
hell even TP had some scenes with blood and still managed to get a teen rating, just because a game has blood doesn't mean it will automatically be rated M

Ganondorf PUKES blood. It was changed to green stuff in later issues, but it's still pretty much blood...
And everything that you hit inside Jabu-Jabu shoots little spurts out.
Also the boss explodes into nasty T/M-rated chunks.

yeah
in the areas with guillotines, it's everywhere
you can find screenshots of it
also in the final scene with the facestab against ganon, a lot of blood flies out.
of course it was also edited and turned green like ganondorf's bloodpuke, but it's definitely always there and even red in the original version

some of the rooms were all fucking made out of skulls, I nearly flipped out when I found that out, shit that entire temple was a mind fuck
