Hello!
Someone on the XeNTaX forum finally helped me for extracting pak files from Giana Sisters : Twisted Dreams - Owltimate Edition. https://forum.xentax.com/viewtopic.php?f=21&t=23005
I discovered that audio files were opus files. I tried to open them, but it didn't worked, even converting them.

Download foobar2000 + vgmstream component:
foobar2000.org
Install the vgmstream component, restart foobar2000. Rename all opus files from *.opus to *.lopus and they will open
