Creative platforming
One of the reasons I loved Super Mario Galaxy so much was all the different ways the whole gravity and planet concept was used throughout the game.
Unlockables
Be it a fighting, adventure or racing game, nothing beats unlockables that make you want to work towards them. This includes the bonus character, cheat mode, harder difficulty setting and the jukebox.
2D graphics
Even through 3D is the new-D it shouldn't make good ol' sprite graphics obsolete.
Player involvement
I'm not particularly fond of overly cinematic games that are essentially longer movies with some tap X to not die thrown in. Cutscenes are nice, as long as the game doesn't play itself.
