If you want to rip NES sprites, you should also try out YY-CHR, which lets you directly pull sprites out of the game's ROM. It does take some time to learn it (and you have to figure out the palettes yourself or load in save states) but if used properly it can be a really powerful tool for getting NES sprites.
There's also FCEUX, probably one of the de-facto emulators for NES ripping mostly cause of it's viewable maps and graphic banks, but it's palette is kinda bright and saturated for my tastes.
