He's bitching about the monochrome, which isn't really what should be bitched about. If you can pull off a monochrome aesthetic and still have decent contrast, it's a commendable feat. What could be bitched about, however, is the low readability of the characters against the background.

That's the thing though
if they would've just chosen to do a different 8-bit style that had color, they could've bypassed the readability issue at least a little.
It makes some amount of sense to go to an 8-bit style to do a game because it could be done simply and quickly, but there's no reason to specifically choose GB's monochrome style except for doing nostalgia for the sake of nostalgia. It's caused more problems than should even exist just to appeal to a specific oldschool look when other oldschool looks are available that could've done it better. It's just not practical.
It's actually 4-bit, but yeah. Continue.
uhh, Gameboy is an 8-bit console. What actually characterizes a console being 8-bit or not is the processor's architecture apparently, so it doesn't matter if the graphics are monochrome or not, it's still 8-bit.

I personally don't see the problem with the momochrome at all.
This was meant to emulate the style of the original gameboy, so the momochrome is fine.
My problem is with the sprites being terrible, not their color usage.
