Rigging Ripped Models

Hi, I'm unsure if there's another tutorial about this, if there is, I apologize, but I really want to know about something.

I work in 3D mainly using Autodesk Maya and I've been downloading a lot of models on The Model's Resource for reference to see how they were modeled and put together. One thing I've noticed a lot is that pretty much all the models are in Tris (Which I kinda expected because of how most game engines work, but I prefer Quads) and that many of the models are in several separate pieces instead of a single model (Eg. A creature with separate meshes for it's head, neck, legs, etc.). I imagine they'd have to be rigged so that the pieces don't fall apart and they stay together, however Rigging is perhaps my worst aspect when it comes to working with 3D models and I don't know a lot about it. I was wondering if someone could tell me how someone would properly rig models like this so that it works fluidly.
