Quick question: would you prefer Dodges to be a command input, a single button and direction press, or just tapping a direction? And are they air-only dodges?

you'd have to ask the others but imo dodges aren't air-only and are command inputs.

I think that dodging could be a separate button, and only in mid-air (ground dodges are relegated to command-input rolling).
once doing air dodge, you can't do that again until you touch the ground.

Why not use the grab button? You can't grab in mid-air unless it's an attack anyway.

The bread attack animation always bothered me. It looks weak. I'm not feeling the impact. Maybe it's because it's squeezed into that 64x64 pixel space and lacks the range it could have. Why not swing that thing around like a baseball bat or something, have people fear baked goods forever.
Speaking of baked goods, sudden random thought. Boomerang Croissant. I don't know if there's a projectile attack with a boomerang effect, but they're rare if there are. Maybe have it move upwards if a specific button is held, like Kirby's Cutter ability in the later games. Use it or don't. Just throwing it out there.

Just chiming in to let you know I finished adding the new animations to existing attacks and they'll be in the version I hope to put out this week. I'm still working on the secondary specials, though, so I can't promise those yet.

One question I keep forgetting to ask: what's the stylized red symbols for? Just cool stuff to add wherever, or is it something specific?
