Trying to Rip graphics from Stronghold Definitive Edition and Pharaoh New Era

Hi guys, I am trying to rip sprites/images from Stronghold Definitive Edition (demo stage) and Pharaoh New Era (full version). 

The files appear to be in Unity .assets file format. Mainly, I am looking to extract the graphics for the resources/raw materials/food/crops. Does anyone know how to do this, or can I share the files and someone can extract it with your tools?
